I would not recommend this book to anyone who is not already familiar with Bulgarian cuisine. It's a good book to have if you just want some basic ideas or just want to add to your Bulgarian recipe box but there are a few other books that are way better if you are only planning on buying one book on this cuisine.
Was this book even edited by an English speaker? Some of the terms make no sense what so ever. One recipe calls for parsley roots...I highly doubt that this is what the author actually used when he made the recipe. Also calls for celery root when I think he means a stalk of celery...two totally different things. Some of the recipes repeat themselves (cabbage sarmi).
The recipe for tikvenik calls for a homemade dough rolled thinly...1/2 inch? 1/4 inch? Thin could mean anything. Actually, you need phyllo dough. It has to be paper thin for the recipe to come out.
Not going to return but would not recommend.
